Olive oil and balsamic vinegar – the culinary power couple gracing our kitchens for centuries. They're versatile, and healthy, and can transform even the simplest ingredients into culinary masterpieces. Olive oil, the golden nectar of the Mediterranean, boasts a history stretching back to ancient Greece, where it fueled Olympic athletes and graced the tables of gods. Balsamic vinegar, on another note, is a complex symphony of aged grape must, born in the vineyards of Modena, Italy.

Ingredients:

  • 1 canned chickpea

  • 2 oz olive oil

  • 1 oz lemon juice

  • 2 oz balsamic fig vinegar

  • 1 garlic clove

  • 1 onion

  • 2 tsp brown sugar (2 packets)

  • 1/2 tsp salt


Garlic Preparation: 

1. Roughly chop 1 clove of garlic


Caramelized Onion Preparation:

1. Place a pan over medium heat and add the 1 tbsp olive oil 

2. Add the thinly sliced onions to the pan and stir to coat them in the oil 

3. Cook the onions for about 10 minutes, stirring occasionally, until they become soft and start to turn golden brown

4. Add the salt and sugar to the pan and stir well to combine with the onions

5. Continue cooking the onions for another 10 minutes, stirring occasionally, until they turn a deep golden brown and become caramelized

6. Once the onions are caramelized, remove from the pan


Instructions:

1. Open the canned chickpea

2. Drain the liquid in the can

3. Wash the chickpea

4. Add chopped garlic, lemon juice, remaining olive oil, 2 tbsp of fig balsamic vinegar, and chickpea to the blender

5. Blend for 45 seconds

6. Add 1-2 cubes of ice to the blender and blend until smooth

7. Transfer to a container 

8. Add caramelized onion on top of the hummus

9. Drizzle hummus with remaining balsamic fig vinegar

10. Enjoy with crackers or fresh vegetables!

Ingredients:

Balsamic Vinaigrette

  • 2 tbsp balsamic vinegar

  • 3 tbsp extra virgin olive oil

  • Pinch of salt

  • Pinch of freshly ground black pepper


Instructions:

1.In a small bowl, whisk the balsamic vinegar (start with 1 ½ tablespoons vinegar and add more—up to another 1/2 tablespoon if desired), oil, salt, and pepper

2. Set aside

3. In a large bowl, toss all the veggies

4. Cover and refrigerate the veggies if not served right away

5. When you’re ready to serve, toss the veggies gently with the vinaigrette

Ingredients:

  • ¼ cup choice of olive oil

  • ¼ cup balsamic vinegar

  • ¼ cup Worcestershire sauce

  • ¼ cup soy sauce

  • 2 teaspoons Dijon mustard

  • 2 teaspoons minced garlic

  • pinch salt and pepper to taste

Instructions:

1.Mix your choice of olive oil and balsamic vinegar, Worcestershire sauce, soy sauce, Dijon mustard, and garlic in a small bowl

2. Season with salt and pepper
